Courgette and carrot roll-ups with pine nuts

These Courgette and carrot roll-ups are attractive on the buffet table and very tasty as well.


Ingredients 8 serves

  • 500g courgettes.
  • 1 small onion.
  • 2 spring onions.
  • 2 carrots.
  • 50g pine nuts.
  • Dressing ingredients.
  • 1 bunch of parsley.
  • 1 tsp oregano.
  • ½ clove of garlic.
  • 1 tbsp soy sauce.
  • Salt, pepper, paprika (spice).
  • 1 tbsp tomato paste.
  • 2 tbsp olive oil.


Wash and salt the courgettes and cut lengthwise into strips, then pat dry with kitchen paper and bake or roast in a pan.

Cut the courgette remains, onion, spring onion and garlic and sauté in a pan. Season the paste with salt, pepper, paprika, soy sauce, tomato paste, parsley and oregano.

Cut carrots into strips and blanch.

Spread the paste on the courgette strips. Roll up with carrot strips placed in the middle and put on a plate.

Roast pine nuts and sprinkle over the roll-ups.
